Easy Strawberry Blondies with Cream Cheese Icing

Strawberry blondies that are simple to make and perfect for the summertime. This blondie recipe includes fresh strawberries in the base and is topped with a cream cheese icing.

Ingredients

  • Blondies
    • 1/2 cup unsalted butter
    • 1 cup light brown sugar, packed
    • 1 large egg
    • 1 teaspoon vanilla extract
    • 1 cup all purpose flour
    • 1/2 teaspoon salt
    • 1/2 cup strawberries, diced
    • 1 teaspoon cornstarch
  • Cream Cheese Icing
    • 2 ounces cream cheese
    • 2 cups powdered sugar
    • 2 tablespoons milk
    • 1/4 teaspoon vanilla extract
    • pinch of salt

Instructions

  1. Preheat the oven to 325°F and line an 8 x 8 baking pan with parchment paper.
  2. In a large mixing bowl, whisk together flour and salt. Set aside.
  3. In a small sauce pan, melt the butter over medium heat. Transfer to a medium sized mixing bowl once melted, and add in the brown sugar. Stir to combine. Add in the egg and vanilla extract and stir to combine.
  4. Add the wet ingredient mixture to your large mixing bowl of dry ingredients. Stir to combine completely.
  5. Before adding in the diced strawberries, toss the berries with cornstarch to lightly coat. Add the strawberries to your large mixing bowl and gently fold into the batter.
  6. Spread the batter in an even layer in your parchment lined baking pan.
  7. Bake in the oven for 25 to 30 minutes, until the edges are golden and the middle is set.
  8. While the blondies are cooling, prepare your cream cheese icing. To a saucepan, add the cream cheese, powdered sugar, vanilla extract, milk and a pinch of salt. Place over low heat on the stovetop and use a whisk to stir until the cream cheese melts and no clumps of powdered sugar remain. Use the icing to cover the blondies or pipe a design. Let cool before slicing and enjoying.

    Hey so i saw this on your Instagram and I was going to make it but the only ingredient i didn’t have was strawberries, could i switch them out with another berry such as cranberries (and i only have dried cranberries so would those work?)?

      Hi! You could either leave out the strawberries completely or try using the dried cranberries instead! It shouldn’t be an issue. 🙂
